Traditional Şambali Dessert

If you’ve ever wandered the streets of İzmir, you’ve likely come across Şambali, a traditional Turkish semolina dessert that’s soft, syrupy, and incredibly satisfying. This Middle Eastern-inspired treat is made with a simple semolina batter, sweet syrup, and topped with peanuts for just the right crunch. Perfect for tea time or after a family meal, Şambali is one of those nostalgic desserts that’s surprisingly easy to make at home.


Ingredients

For the batter:

  • 2.5 cups semolina

  • 1 cup granulated sugar

  • 1 cup milk (slightly less than full)

  • 1 teaspoon baking soda

For the syrup:

  • 1.5 cups water

  • 2 cups granulated sugar

  • 1 slice lemon

For brushing:

  • 1 teaspoon molasses

  • 2 tablespoons water

For garnish:

  • ½ handful unsalted peanuts


Instructions

  1. In a mixing bowl, combine sugar, semolina, milk, and baking soda. Mix until well combined.

  2. Let the mixture rest for a while so the semolina absorbs the liquid and the texture becomes soft.

  3. Grease a small square baking dish and spread the mixture evenly inside.

  4. Score the top into slices before baking. Brush with the molasses-water mixture and place peanuts along the scored lines or in the center of each slice.

  5. While the dessert is baking, prepare the syrup. In a saucepan, combine sugar, water, and a slice of lemon. Bring to a boil, then simmer for about 10 minutes.

  6. Once the dessert is baked and golden, remove it from the oven. Cut through the slices again, then bake for an additional 10 minutes to ensure a nice color.

  7. While still hot, pour the hot syrup evenly over the dessert. Allow it to rest and absorb the syrup completely.

  8. Your traditional Şambali is now ready to serve!
