Creamy Turkish Kadaif Dessert (Muhallebili Kadayıf)

Ingredients

For the kadaif layer:

  • 300 g shredded kadaif pastry

  • 1.5 cups crushed walnuts

  • 3 tablespoons butter

  • 5 tablespoons granulated sugar

For the milk pudding (muhallebi):

  • 1 liter milk

  • 4 tablespoons all-purpose flour

  • 3 tablespoons cornstarch

  • 1 cup granulated sugar

  • 1 egg yolk

  • 1 packet vanilla extract

  • 200 ml heavy cream


Instructions

  1. Break the shredded kadaif pastry into small pieces. For easier handling, freeze it for about 2 hours beforehand. Place it in a large bowl and gently crumble with your hands.

  2. In a non-stick pan, melt the butter. Add the sugar and kadaif, stirring continuously with a wooden spoon over low heat until the pastry turns golden brown.

  3. Mix in the crushed walnuts and continue stirring for a few minutes. Transfer the mixture to a wide plate and let it cool.

  4. For the pudding: In a saucepan, whisk together milk, sugar, flour, and cornstarch until smooth. Add the egg yolk and whisk again. Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil.

  5. Remove from heat and allow the pudding to cool for 15–20 minutes. Once cooled, add heavy cream and vanilla, then whisk until smooth and creamy.

  6. Spread half of the toasted kadaif mixture evenly into a serving dish.

  7. Pour all of the pudding over the kadaif layer and spread it evenly.

  8. Top with the remaining kadaif mixture, spreading it carefully to cover the pudding.

  9. Chill for at least 1–2 hours before serving. Slice and enjoy your homemade Muhallebili Kadayıf!
