İzmir Bomba Dessert (Chocolate-Filled Pastry)

Crispy on the outside and filled with gooey chocolate inside, İzmir Bomba is one of the most beloved street desserts in Turkey’s coastal city of İzmir. This quick and simple recipe requires just a handful of ingredients but delivers an explosion of flavor with every bite. Perfect with coffee or tea, İzmir Bomba is a dessert you’ll want to make again and again.

Ingredients

  • 1.5 cups all-purpose flour

  • ½ cup lukewarm water

  • ½ Turkish tea glass vegetable oil (about 50 ml)

  • 1 tablespoon sugar

  • 1 packet vanilla extract

  • 300 g chocolate spread (such as Nutella or hazelnut cream)


Instructions

  1. In a mixing bowl, combine lukewarm water, vegetable oil, sugar, flour, and vanilla. Mix with a spoon until a dough begins to form.

  2. Once the dough comes together, knead it by hand for 1–2 minutes until it is soft and smooth but not sticky. Cover and let it rest for 20 minutes.

  3. Transfer the dough to a lightly floured surface. Roll it into a log and cut it into 16 equal pieces.

  4. Shape each piece into a ball. Using a rolling pin, roll out each ball into a thin circle.

  5. Place about 1 tablespoon of chocolate spread in the center of each circle.

  6. Fold the dough over the filling, pinch the edges together, and press gently to seal. Trim off any excess dough if needed.

  7. Place the prepared pastries on a baking tray lined with parchment paper.

  8. Bake in a preheated oven at 220°C (fan setting) for about 6 minutes, until the edges are slightly golden while the center remains soft.

  9. Serve warm for the ultimate chocolate explosion!
