Semolina Halva is one of Turkey’s most beloved traditional desserts, often associated with remembrance, comfort, and hospitality. Prepared with toasted semolina and butter, enriched with golden pine nuts, and soaked in a fragrant milk-based syrup, it’s a simple yet soulful dessert. Served warm and optionally topped with cinnamon or a scoop of ice cream, it brings back nostalgic flavors with every spoonful.


Semolina Halva

Ingredients

For the semolina halva:

  • 3 tablespoons butter

  • 1/2 cup pine nuts

  • 1.5 cups semolina

  • 1.5 cups milk

  • 1.5 cups water

  • 1.5 cups granulated sugar

For serving (optional):

  • 2 teaspoons cinnamon

  • Ice cream (optional)


Instructions

  1. Melt the butter in a large pan over medium heat.

  2. Add the pine nuts and toast them until golden.

  3. Stir in the semolina and toast the mixture on low heat, stirring constantly for about 20 minutes until it darkens in color and releases a nutty aroma.

  4. Meanwhile, in a separate small saucepan, combine milk, water, and sugar. Stir and bring to a simmer over low heat until the sugar dissolves.

  5. Once the semolina is well toasted, slowly pour in the hot syrup while continuously stirring. Be careful of splashing.

  6. The mixture will bubble — keep stirring as it thickens.

  7. Cook for another 8–10 minutes on low heat until it reaches a soft, cohesive texture.

  8. Cover with a lid and let it rest for 10–15 minutes.

  9. Shape and serve the halva in small bowls, optionally inverted. Garnish with cinnamon or serve with a scoop of ice cream.
