Ingredients
To Boil the Rice:
2 cups water
1 tea glass (about 100 ml) rice
For the Pudding:
5 cups milk
1 cup granulated sugar
1 egg yolk
2 tablespoons wheat starch
1 packet vanilla powder
1 cup water (to dissolve the starch)
Instructions
Cook the Rice: Rinse the rice under cold water until the water runs clear. In a pot, combine with 2 cups of water and cook over medium heat until all water is absorbed. Set aside.
Prepare the Milk Mixture: In a separate large saucepan, combine cold milk and sugar. Stir until the sugar dissolves, then add vanilla and place over low heat to warm.
Mix the Thickener: In a small bowl, whisk the egg yolk, wheat starch, and 1 cup of water until smooth.
Temper the Egg Mixture: To prevent curdling, add a few spoons of the warm milk mixture into the egg-starch mix and whisk quickly to temper.
Combine Everything: Slowly pour the tempered egg mixture into the milk, whisking constantly. Then add the cooked rice.
Cook Until Thick: Continue stirring over low heat until the pudding thickens.
Bake: Pour the mixture evenly into oven-safe ramekins. Place them in a deep baking tray. Add water to the tray until it reaches halfway up the ramekins (avoid touching the pudding). Bake at 200°C (390°F) for 12-15 minutes or until tops are lightly browned.
Cool and Serve: Allow to cool at room temperature, then refrigerate. Serve chilled.
