Apple-Filled Cookies

These traditional Turkish apple-filled cookies feature a rich buttery dough wrapped around a sweet, spiced apple and walnut filling. Ingredients
For the Apple Filling:
3 large red apples, grated
1/2 cup granulated sugar
1/2 cup crushed walnuts
1 tsp cinnamon
For the Dough:
200 grams unsalted butter (softened)
1 Turkish tea glass (about 100 ml) vegetable oil
3/4 Turkish tea glass yogurt
3/4 cup granulated sugar
1 tsp baking soda
1 tsp lemon juice
4.5 cups all-purpose flour (add gradually)
For Topping:
Powdered sugar, for dusting
Instructions
To prepare the filling, place the grated apples in a pan with the sugar. Cook over medium heat until the apples release their juice and become caramelized.
Once caramelized, stir in the crushed walnuts and cinnamon. Remove from heat and let it cool.
In a large mixing bowl, combine softened butter, vegetable oil, yogurt, sugar, lemon juice, and baking soda. Mix well.
Gradually add the flour and knead until you get a soft, non-sticky dough.
Lightly flour your work surface and roll out the dough. Cut into circular shapes.
Place a spoonful of apple filling in the center of each round and fold the sides over.
Arrange the cookies on a baking tray lined with parchment paper.
Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until lightly golden.
Once cooled, dust with powdered sugar and serve.
