Ingredients

For the gratin:

  • 400 grams white mushrooms (sliced with stems)

  • 2 tbsp all-purpose flour

  • 2 tbsp butter

  • 3.5 to 4 cups milk

  • 1 tsp salt

  • 1 tsp black pepper

  • 1/2 tsp garlic

For the topping:

  • 1 cup shredded mozzarella or cheddar cheese


Instructions

  1. Slice the mushrooms with their stems and cook them in a dry pan over medium heat until they release their water and it evaporates completely. Set aside.

  2. In a separate saucepan, melt the butter. Add flour and stir continuously until it gives off a toasty aroma.

  3. Gradually add the milk while whisking constantly to avoid lumps. Continue stirring until the mixture thickens to a custard-like consistency.

  4. Stir in the sautéed mushrooms, salt, pepper, and grated garlic. Mix well.

  5. Transfer the mixture into a baking dish (clay or ceramic dishes add even more flavor).

  6. Sprinkle shredded cheese evenly on top.

  7. Bake in a preheated oven at 200°C (390°F) for about 10 minutes, or until the cheese is golden and bubbly.

  8. Serve hot and enjoy!
