Turkish Orman Kebab (Forest Stew with Meat and Vegetables)

Orman Kebabı, also known as "Forest Kebab," is a comforting Turkish stew that combines tender cubes of meat with seasonal vegetables like carrots, potatoes, and peas. Cooked slowly to perfection, this hearty dish is full of flavor and perfect for family dinners. With its rich aroma and rustic presentation, Orman Kebab is one of those traditional recipes that warm both the stomach and the soul.
Ingredients
500 g cubed beef (or lamb)
2 medium onions
2 carrots
2 potatoes
1 tablespoon tomato paste
2 tablespoons flour
3 tablespoons olive oil
1 bowl canned peas
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried thyme
¼ Turkish tea glass olive oil (for toasting thyme)
Instructions
In a bowl, coat the cubed meat with 1 tablespoon olive oil and 2 tablespoons flour. Mix well.
Heat 2 tablespoons olive oil in a non-stick pot. Add the floured meat and sauté until it releases and reabsorbs its juices. Transfer the meat to a plate and set aside.
In the same pot, sauté the roughly chopped onions. Add a little more olive oil if needed.
Stir in the chopped carrots and continue sautéing. Finally, add the diced potatoes and cook for a few minutes.
Return the meat to the pot, add tomato paste, and mix well.
Pour in enough hot water to cover the ingredients. Season with salt and black pepper. Simmer until the meat becomes tender.
Once the meat is soft, add the peas and let everything cook together for a few more minutes.
In a separate pan, heat 1 tablespoon butter with plenty of dried thyme until fragrant. Drizzle this mixture over the stew for extra flavor.
Remove from heat and serve hot. Your Orman Kebab is ready!
