Menemen is one of the most beloved traditional Turkish breakfast dishes. Made with fresh tomatoes, green peppers, and eggs, it’s a simple yet incredibly flavorful recipe. Soft, slightly juicy, and full of aroma, menemen is perfect to enjoy with freshly baked bread.

Ingredients
2 tbsp olive oil
2 tbsp butter
3 medium tomatoes (grated)
4 green peppers (chopped)
3 eggs
1 tsp salt
½ tsp black pepper
½ tsp red pepper flakes
Fresh parsley for garnish (optional)
Instructions
Heat the olive oil and butter in a wide pan.
Add the chopped green peppers and sauté until softened.
Stir in the grated tomatoes, salt, black pepper, and red pepper flakes. Cook until the mixture thickens slightly.
Add the egg whites first and stir constantly until cooked.
Then add the yolks and cook for about 1 minute, stirring gently.
Remove from the heat, garnish with parsley, and serve hot with bread.
