A steaming bowl of Mantar Çorbası (Creamy Mushroom Soup) is the perfect way to warm up on a chilly day. This Turkish classic combines earthy mushrooms with milk for a rich, velvety texture that’s both comforting and satisfying. Simple to prepare yet full of flavor, it’s an ideal starter or a cozy meal on its own.

Creamy Mushroom Soup

Ingredients

For the soup:

  • 300 g mushrooms, sliced

  • 1 onion, finely chopped

  • 2 tablespoons butter

  • 1 tablespoon vegetable oil

  • 3 tablespoons flour

  • 1 cup milk

  • 5 cups water

  • 1/2 teaspoon salt

  • 1 teaspoon coarsely ground black pepper

For garnish:

  • 1 teaspoon chopped parsley

Instructions

  1. Add the chopped onion and oil to a pot and sauté until the onion softens and turns golden.

  2. Stir in the sliced mushrooms and continue cooking until they release their juices and change color.

  3. Add the flour and cook for another 1–2 minutes, stirring constantly.

  4. Once the raw flour smell disappears, pour in the water and stir well.

  5. When the mixture comes to a boil, add the milk and continue stirring.

  6. Let the soup simmer until it thickens and reaches a creamy consistency.

  7. Season with salt and black pepper, stirring to combine.

  8. Garnish with chopped parsley and serve hot.
